Precise timing of the harvest allows the delicate aromas to be fully expressed in detail, through controlled fermentation in stainless steel tank with neutral Pinot yeast. Early bottling after a short maturation on the fine lees brings freshness & structure into perfect harmony.
Intense, vibrant green accents in the colour; peppery & delicately fruit-forward on the nose with crunchy apple, lime & flint aromas, juicy & fresh on the palate; gooseberry fruit and spice in the finish with finely tuned acidity.
